Question: What happens if i set in the orders to choose a formation at "any score" and "any time"?
It will change in a random way or else?

If I choose to rest a player from the training, how much energy does he get then?

If it is starting formation, you'll play with this all game long.

If its 1 formation, you'll play with this formation all game long, unless your starting formation has specific/any situations and/or times to come into play.

If its 2 formation, you'll play with this formation all game long, unless your starting formation and/or 1 formation have specific/any situations and/or times to come into play.

High experience + very nervous VS low experience + ice-cold?

I've noticed that my highly experienced but very nervous player started missing a lot of shots on international level lately ... My lower experienced but ice-cold players are barely missing at all (the difference in experience is as far as 2,5* stars).

So, is my theory that nerves are better than experience in tough games correct?

Yes.

3. What is “Under Pressure” and what does it do?
Under pressure shows the players mental state when the going gets tough. It is taken into account for the last 10 minutes of regular games and for the duration of the whole game in international or regional cup final games.

Experience only helps to build team chemistry faster.
Rating does help to play better.

It wouldn't make much sense if experience didn't boost a performance.

And i do believe that there a many cases that proves that experience does make a difference.
